Description
When I drop a PBF file, downloaded from http://download.geofabrik.de/, on QGIS 3.0.3, I get a window where I can select feaures based on geometry type (lines, points...). Quite often, I am more interested in filtering features based on attribute data (fuel station, restaurant, road type etc.). I would like to see this implemented in QGIS. This would especially be relevant in processing models, where I could extract desired parts of the OSM data for further processing.

QGIS is only asking which geometry to load in each layers (points, lines, multipolygons...). If you need more filtering, you can do it in a Processing model using the feature filter algorithm (http://changelog.qgis.org/en/qgis/version/3.2.0/#feature-filter-algorithm-for-processing-models) or simple "select by expression".
If you need the filtering before processing, you can still use the data provider filtering on your vector layer properties or to filter your file before using in QGIS.
